19/11/08 Christmas Cake Ingredients10oz sultanas 10oz raisins 4oz dates, chopped 4oz apricots, chopped 2oz cherries Juice and peel of 1 orange 8oz butter 8oz brown sugar 4 eggs 8oz plain flour 3oz self-raising flour ½ tsp mixed spice ½ tsp nutmeg ½ tsp cinnamon 2oz nuts 1tbsp black treacle 5oz brandy Oven temperature 150/2 Grease and line 8" - 9" tin Method Put the dry fruit, brandy, orange juice and peel into a saucepan. Bring to the boil. Remove from heat and leave for an hour. Beat the butter and sugar. Add the eggs and flour alternately. Add the fruit and treacle and mix well. Pour the mix into the tin. Place brown paper around the tin and tie with string to secure. Bake in the oven for 3 – 3½ hours. Leave the cake to cool before taking it out of the tin. |


Mair's roots are deep in the heart of the Ceredigion countryside. She was raised on Brynchwith farm, Llangwyryfon. Without moving far from her original home, Mair threw herself into the local community by attending the Young Farmers Club and the Women's Institute. There she learnt, listened and noticed all the diferent recipies and adapted them for the Welsh kitchen. Since 1994, Mair has faithfully served the listeners of Radio Ceredigion every week.
